Great Hickory Wood is loaded into our pits (by the way, it's the hickory smoke that creates the telltale bank of pink in all of our meats) for that authentic (not liquid) Southern flavor! Hickory smoke curls for hours in a slow heat around our ribs, pork shoulder, beef, chicken and turkey until they have the texture and the tenderness that signifies Memphis Bar.B.Q. Company.
Our pork shoulder are cooked overnight (12-14 hours) and our ribs, beef, chicken and turkey are cooked fresh several times throughout the day for your delight. Our meals are basted and "rubbed" - a secret recipe that one of our founders, David Sorin, used in his first restaurant starting over 25 years ago in Memphis, TN - throughout the cooking process. Rubbing brings out the flavor without smothering it. Our homemade sauces are a treat for your taste and are not allowed to overpower the delicate flavor of meat.
